Preparation time: 30 minutes approx.
Ingredients
Small potatoes: 250 gms
Onions (sliced): 1/2 Cup
Capsicum (sliced): 1/2 Cup
Soy sauce: 1 tbsp.
Chilly sauce: 1 tsp. ( as per taste )
Tomato Ketchup: 1 tbsp.
Black Pepper powder: 1/4 tsp.
Salt: To taste
Let's start!
· Wash the potatoes and boil them till tender that means just half boiled so that they don't break when we stir them in a Wok / Karahi.
· Peel the potatoes and prick each potato on all sides using a fork.
· Heat 2 tbs oil in a wok, add potatoes and stir fry on high flame till they turn golden.
· Remove into a bowl separating the oil.
· Add 1 tsp oil to the oil left in the Wok and stir fry the sliced Onions and Capsicum till the onions become translucent.
· Add all three sauces, salt and pepper and stir well.
· Lower the flame, add the potatoes and mix well.
· Cover the Wok with a lid and let the potatoes cook for 2 minutes.
· Garnish with some chopped coriander and Ginger juliennes and serve hot.
