A leftover yet all incorporating healthy recipe ideal for Breakfast. You can make one big Uttapam and cut into pieces and serve or make small individual pan cakes. Tastes great with Amul butter.
Preparation Time: 20 minutes
Ingredients
Leftover Rice: 1 Cup
Leftover Dal: 1/2 Cup
Besan: 2 tbs
Onion (chopped): 1 small
Green Chilly (chopped): 1
Coriander leaves (chopped): 1 tbs
Capsicum (deseeded & chopped): 1/2
Ginger (grated): 1 tsp
Salt: 1 tsp
Ajwain (optional): 1/2 tsp
Spices of your choice
Water: 5 - 6 tbsp
Let's start
· Put rice in a mixing bowl and mash slightly
· Add all other ingredients except Water and mix well
· If the batter is very thick then add some water and mix
· The batter should be like khichri and NOT of POURING Consistency
· Heat a non - stick Tawa , grease it and drop a ladle full of batter and spread it lightly with the ladle
· Let it cook on low flame till Golden brown and then turn it over with a Spatula and let the other side too turn golden brown
· Remove on a plate and serve hot with any chutney or pickle.
Note: You can add any leftover Vegetable, if it has gravy then first mix well, check its Consistency and then add or avoid Water.
